Vanilla, Madagascar’s black Gold

 Prized for its delicious sweetness and its refined facets, Vanilla is used as a culinary flavouring and the absolute is added to perfume. From pod to bottle, this much-loved spice is cultivated and processed on the island of Madagascar in the Indian Ocean. 

It all starts with Vanilla Planifolia, the only orchid among 35.000 found on the planet which is capable of producing an edible fruit. Originating in Mexico, the plants were transported all around the Ecuator during the 19th century. Most significantly, some were taken to Madagascar, which is now the largest producer of vanilla in the world.

Vanilla production is primarily a story of people. Inhaling our favourite fragrance, it is hard to imagine the number of skilled and caring hands charged with turning and agricultural crop into such a precious spice. 

It takes three to four years for the vanilla plants to become a mass of creepers that the farmer then carefully prunes to encourage flowering. The flowers are hermaphrodite and must be pollinated by hand, one by one, using a method that was invented in the 19th century by a Creole slave. Nine months later they turn into Green pods ready for harvest. It takes 600 flowers to produce about 6 kg of vanilla. 

 “Intuitive Understanding”

The pods are cured and put through numerous stages of sorting and grading- a process that requires great expertise. Pierre Gueros, a perfumer at Symrise, says: “I was able to sit down with the people who perform the final quality checks. They are often older men, those with the most experience, who have grown up with vanilla and have developed a very precise, intuitive understanding of it. Simply by plunging their nose into a bundle, they are able to pick out any pods that are substandard.”
